Mushroom Stroganoff

Mushroom Stroganoff

Makes: 6 cups
Serving Size 1 cup

Ingredients

1 Tablespoon margarine or butter
2 1⁄2 cups chopped onion (2 1/2 medium onions)
4 cups sliced mushrooms (16 to 20 medium fresh button mushrooms)
3⁄4 cup water
1 teaspoon bouillon (1 cube) - vegetable, beef or chicken
1 teaspoon garlic powder
1 Tablespoon corn starch
3 Tablespoons light sour cream
3 cups cooked whole grain noodles or brown rice

Directions

  1. Heat the margarine in a large skillet over medium-high heat (350 degrees in an electric skillet). Add onion and mushrooms. Sauté and stir until starting to brown.
  2. In a small bowl, mix water, bouillon, garlic powder and cornstarch. Add to skillet and cook until sauce is thickened.
  3. Remove from heat. Stir in sour cream.
  4. Serve with cooked whole grain noodles or brown rice. Garnish with paprika and chopped parsley if desired.
  5. Refrigerate leftovers within 2 hours

Spanish Rice

Spanish Rice

Prep time: 10 minutes
Cooking time: 15 minutes
Makes: 3 cups
Serving Size 1/2 cup

Ingredients

1 cup low-sodium vegetable broth (see Notes)
1 package (1.25 ounce) taco seasoning or 1/4 teaspoon each of chili powder, garlic powder, ground cumin, and oregano
1 cup instant brown rice
1⁄3 cup salsa
1⁄2 cup corn, frozen or canned and drained
1⁄2 cup black beans drained and rinsed

Directions

  1. Bring the vegetable broth and seasonings to boil in a medium saucepan (2 to 3 quarts).
  2. Add the rice, salsa, corn and beans. Turn heat to low, cover pot, and let cook undisturbed for 10 minutes.
  3. Gently stir before serving.
  4. Refrigerate leftovers within 2 hours.

Notes

  • Broth can be canned or made using bouillon. For each cup of broth use 1 cup very hot water and 1 teaspoon or 1 cube bouillon.
  • Substitute 1 1/3 cups of Farmers Market Salsa in place of the last three Ingredients.

Quick Tomato Salsa

Ingredients

1 can (15 ounces) diced tomatoes
1⁄4 cup onion, chopped (1⁄4 medium onion or 2 green onions, chopped including green tops)
1 clove garlic, chopped or 1/4 teaspoon garlic powder
1 lime, squeezed for juice
1 can (4 ounces) diced green chilies
1⁄4 cup fresh cilantro leaves, loosely packed

Directions

  1. Combine Ingredients, except cilantro, in a blender and blend to desired consistency.
  2. Finely chop cilantro and stir into other Ingredients.
  3. Serve immediately or refrigerate in airtight container for up to 1 week.

Notes

  • No blender? Make a chunky salsa by cutting all Ingredients to desired size before mixing.
  • Try adding drained canned corn or black beans with cilantro.
  • Make ahead to allow flavors to blend.
  • Freeze extra lime juice to use later.

Ingredients

1 medium leek, chopped (about 3 cups)
2 teaspoons oil
2 medium apples, cored and chopped
1 Tablespoon honey
1 teaspoon vinegar
1⁄4 teaspoon each salt and pepper

Directions

  1. Sauté leeks in oil in a medium skillet over medium heat, stirring occasionally, until the leeks are soft (about 5 minutes).
  2. Add apples and continue cooking, stirring frequently, until apples begin to soften (about 3 minutes).
  3. Remove from heat. Add honey, vinegar, salt and pepper. Stir gently to combine all Ingredients. Serve warm.
  4. Refrigerate leftovers within 2 hours.

Ingredients

1 Tablespoon sesame seeds (optional)
1 teaspoon sesame oil or vegetable oil
3 cups chopped broccoli, fresh or frozen
2 Tablespoons water
1 Tablespoon vinegar or water
2 teaspoons soy sauce
1 Tablespoon sugar
1 teaspoon corn starch
1⁄8 teaspoon red pepper flakes (optional)

Directions

  1. Toast sesame seeds (if using) in a dry skillet on medium-high heat for 3 minutes or until golden brown. Set aside.
  2. In a medium skillet, sauté broccoli in oil over medium heat for 2 to 3 minutes.
  3. In a small bowl, combine water, vinegar, soy sauce, sugar, cornstarch, and red pepper flakes (if using).
  4. Add the sauce mixture to the broccoli in the skillet. Stir and cook until broccoli is tender and the sauce has thickened, about 3 to 5 minutes. Sprinkle with toasted sesame seeds (optional). Serve.
  5. Refrigerate leftovers within 2 hours.

Directions

  1. Add oil and onion to large skillet. Stir and saute over medium-high heat (350 degrees in an electric skillet) until onion is clear.
  2. Add cranberries and garlic. Continue to saute for 2 to 3 minutes.
  3. Add kale. Pour or squeeze orange juice over top of kale. Continute to stir fry for about 5 minutes until kale is wilting and hot.
  4. Serve immediately.

1 can (4 ounces) mild jalapeño peppers

  1. For a smooth dip, place Ingredients in a blender and blend until smooth.

Ingredients

1⁄2 cup corn (canned and drained, frozen, or fresh cooked)
1 can (15 ounces) black beans, drained and rinsed
1 cup fresh diced tomatoes

Ingredients

8 cups chopped kale (about 1 large head)
1 can (15 ounces) fruit in 100% juice (try pears, peaches, mandarin oranges, apricots, pineapple)
1⁄2 cup 100% fruit juice, reserved from canned fruit
1 Tablespoon vegetable oil
1⁄4 teaspoon each salt and pepper
1⁄4 cup unsalted sunflower seeds (optional)

Directions

  1. Wash kale and pat dry. Remove rib from the middle of each leaf. Chop or tear leaves into bite sized pieces and place in a large bowl. Drain and chop fruit if pieces are large. Add to kale.
  2. In a small bowl, combine fruit juice, vegetable oil, salt, pepper, and sunflower seeds, if desired. Mix well.
  3. Add dressing to the kale and fruit and stir to combine. Cover and refrigerate for at least 1 hour before serving.
  4. Refrigerate leftovers within 2 hours

Notes

  • To soften the kale and improve the flavor, before adding the fruit in step 1, rub the torn leaves together until the kale becomes dark green and fragrant, about 3 to 5 minutes, OR prepare the salad a day ahead and refrigerate.

2 pounds winter squash (try acorn, butternut, delicata, or others)
3 Tablespoons brown sugar

Directions

  1. Preheat oven to 400 degrees. Line a rimmed baking sheet with foil. Lightly spray foil with cooking spray.
  2. Wash the squash, cut in half and scoop out seeds. Cut into 1-inch thick slices and lay on baking sheet.
  3. In a small bowl, combine brown sugar, salt and pepper. Sprinkle squash with half the seasoning mixture.
  4. Bake until sugar has melted, about 4 to 6 minutes. Remove baking sheet from oven and turn squash slices over. Sprinkle remaining seasoning mixture over squash and return to the oven. Bake until squash is tender, about 15 to 20 minutes. Serve warm.

Directions

  1. Preheat oven to 350 degrees.
  2. Pour ½ cup of pasta sauce in a large baking dish. Sprinkle salt and pepper over chicken and add to the dish. Top with remaining ½ cup of pasta sauce, spinach and mozzarella.
  3. Bake for 30 to 40 minutes until chicken is no longer pink inside and cheese begins to turn brown.

Ingredients

3 cups sliced carrots (about 6 to 8 fresh) or two cans (14.5 ounce each) or frozen (16 ounces)
2 teaspoons butter or margarine
2 teaspoons honey or brown sugar
1⁄4 teaspoon salt
1⁄8 teaspoon pepper
1⁄2 teaspoon seasoning (optional) - see Notes below

Directions

  1. Cook carrots until they are very soft.
    Fresh - Steam or boil.
    Frozen - Follow package Directions or microwave, steam or boil.
    Canned - Rinse and drain. Add a small amount of water and heat in a saucepan or in the microwave.
  2. Drain carrots if needed. Put carrots in a medium bowl. Mash with a fork until smooth.
  3. Stir in butter, honey, salt and pepper.  Add seasoning if desired.
  4. Refrigerate leftovers within 2 hours.

Notes

  • Add your favorite seasoning! Try one of these: chili powder, curry powder, onion powder, dried thyme, and dried sage.
  • Honey is not recommended for children under 1 year old.

Crunchy Chicken Nuggets

Ingredients

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1⁄2 cup barbeque sauce
3 cups cereal flakes

Directions

  1. Preheat oven to 375 degrees.
  2. Mix chicken and barbeque sauce in a large bowl.
  3. Pour cereal flakes into a large plastic bag and crush into small pieces.
  4. Place chicken pieces in the bag, reseal, and toss to coat.
  5. Lightly coat a baking sheet with cooking spray. Arrange coated chicken pieces on the baking sheet.
  6. Bake until crispy and golden brown and chicken is no longer pink inside, about 20 to 25 minutes.
  7. Refrigerate leftovers within 2 hours.

Notes

  • For a dipping sauce, mix 1/4 cup mayonnaise, 1 tablespoon honey, and 1 tablespoon whole-grain mustard.
  • Honey is not recommended for children under 1 year old.
  • For a home-made barbeque sauce, mix the following Ingredients:
    • 1/4 cup ketchup
    • 1/4 teaspoon each black pepper, salt, oregano, basil and thyme
    • 1 teaspoon paprika
    • 1 teaspoon parsley
    • 2 tablespoons finely chopped yellow onion
    • 1 1/2 tablespoons light brown sugar
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon dijon mustard
    • 1 1/2 teaspoons Worcestershire sauce
    • 1/2 teaspoon minced garlic or 1 pinch of garlic powder
