Ingredients

1 teaspoon oil
2 eggs, beaten
1 package (16 ounces) frozen Asian style vegetables or 1 pound fresh vegetables
3 cups cooked rice
1 teaspoon garlic powder or 4 cloves of garlic
1⁄4 teaspoon ground ginger
1 cup cooked chicken, diced
2 green onions, sliced
1 Tablespoon soy sauce or hot sauce (optional)

Directions

  1. Heat oil in a large skillet over medium-high heat (350 degrees in an electric skillet). Add eggs and scramble. Remove cooked eggs and set aside.
  2. Add small amount of water to pan and cook vegetables until tender crisp.
  3. Add cooked rice, garlic powder and ground ginger and stir to heat through, breaking up lumps by pressing against pan.
  4. Add cooked chicken and cook until heated.
  5. Add green onions and cooked egg, and heat through.
  6. Serve with soy sauce or hot sauce.
  7. Refrigerate leftovers within 2 hours.

Notes

  • Use leftover ham or pork in place of chicken.
  • Use brown rice to include whole grains

Low-Fat Pumpkin Bread

Ingredients

non-stick cooking spray or oil
2 2⁄3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1⁄2 teaspoon salt
1⁄2 teaspoon ground cloves
1⁄4 teaspoon ground ginger
1⁄4 teaspoon nutmeg
4 large eggs
1 cup canned pumpkin
1 cup dried plum puree (see Notes)
1 cup packed brown sugar
1 cup sugar

Directions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, salt, cloves, ginger, and nutmeg.
  3. Add the eggs and pumpkin. Stir until mixed together.
  4. In a large bowl, blend the dried plum puree, brown sugar and sugar.
  5. Lightly coat a 8 ½ x 4 ½ -inch loaf pan with cooking spray or oil and set aside.
  6. Add dry Ingredients to the plum mixture. Stir only until the dry Ingredients become moistened. Be careful not to over mix.
  7. Pour batter into loaf pan and spread into the corners.
  8. Bake for about 1 hour or until a wooden pick inserted into the center of the loaf comes out clean.
  9. Remove from oven and let cool in pan for 10 minutes.
  10. Remove from pan and let cool completely on a rack. Slice to serve.
  11. Wrap in plastic or foil to store for several days or freeze for up to a month.

Notes

  • To make the dried plum puree: combine 2/3 cup pitted dried plums (4 ounces) and 3 tablespoons water in a blender. Blend until the plums are finely chopped.
  • If you don't have dried plums on hand, try using applesauce or plum baby food

Ingredients

2 cups cooked pearl barley (cooking Directions below)
1 can (15 ounces) kidney beans, drained
1 cup corn (canned and drained, frozen, or fresh cooked)
1 large red bell pepper, seeded and finely chopped
1⁄2 cup sliced celery
1⁄4 cup sliced green onion
1 clove garlic, finely chopped or 1/4 teaspoon garlic powder
1⁄4 cup fresh lemon or lime juice
2 Tablespoons oil
salt
 and pepper to taste
fresh cilantro or parsley sprigs, for garnish (optional)

Directions

  1. Mix barley with remaining Ingredients, except garnish, in a large bowl.
  2. Cover and chill several hours or overnight to allow flavors to blend.
  3. Garnish with cilantro or parsley sprigs, if desired, and serve.
  4. Refrigerate leftovers within 2 hours.

Notes

  • One large ear of corn makes about 1 cup of cut corn.
  • Freeze extra lime or lemon juice to use later. 
  • Cook your own dry beans. One can (15 ounces) is about 1 1/2 to 1 3/4 cups drained beans.
  • To cook pearl barley:
    • In medium saucepan with lid, bring 3 cups water to a boil. Add 1 cup pearl barley and return to boil. Reduce heat to low, cover, and cook 45 minutes or until barley is tender and liquid is absorbed. Makes about 3 to 3 1/2 cups. Place any extra cooked barley in an airtight container and refrigerate for up to a week or freeze. Add cooked barley to soups, stews, casseroles and salads for a healthful whole grain boost

Ingredients

1 egg, beaten
1⁄2 cup applesauce
1 1⁄2 cups non-fat or 1% milk
1 teaspoon vanilla
2 Tablespoons oil
1 apple, chopped (about 1 ½ cups)
2 cups old fashioned rolled oats
1 teaspoon baking powder
1⁄4 teaspoon salt
1 teaspoon cinnamon

TOPPING
2 Tablespoons brown sugar
2 Tablespoons chopped nuts

Directions

  1. Preheat oven to 375 degrees. Lightly oil or spray an 8" x 8" baking pan.
  2. Combine the egg, applesauce, milk, vanilla and oil in a bowl. Add the apple.
  3. In a separate bowl, mix the rolled oats, baking powder, salt and cinnamon. Add to the liquid Ingredients and mix well.
  4. Pour mixture into baking dish, and bake for 25 minutes.
  5. Remove from oven and sprinkle with brown sugar and nuts.
  6. Return to oven and broil for 3 to 4 minutes until top is browned and the sugar bubbles.
  7. Serve warm. Refrigerate leftovers within 2 hours.

Notes

  • Substitute other fruit for the apple. Try bananas, pears, blueberries or a mixture

Ingredients

3 cups almond milk
1 cup white or brown rice, uncooked

Ingredients

1 Tablespoon vegetable oil
1⁄2 cup diced onion (1/2 medium onion)
2 stalks celery, chopped
2 carrots, sliced in 2” sticks
1 can (about 15 ounces) diced tomatoes, with juice
1 medium potato, diced
1 zucchini (sliced 1/4 inch thick)
2 Tablespoons parsley, minced
1 cup water
1 teaspoon vegetable broth granules (or 1 bouillon cube)
1⁄2 teaspoon salt
1⁄4 teaspoon pepper

Directions

  1. In a deep pot heat 1 Tablespoon of oil.
  2. Add onions and celery and sauté until they are soft.
  3. Add the rest of the vegetables, 1 cup water and vegetable broth granules.
  4. Season with salt and pepper.
  5. Cover and simmer slowly for 30 minutes or until carrots and potatoes are tender.

  2. Add water, rice, garlic powder, chili powder, salt, pepper, tomatoes with juice, corn, and beans.
  3. Cook, covered, for about 20 minutes or until rice is soft.
  4. Remove from stove top, sprinkle with grated cheese, and serve hot.

3 cups water

Directions

  1. For noodles: Put flour in a medium bowl, make a well in center, and add eggs. Mix well. Add water 1 tablespoon at a time, until dough is stiff but easy to roll.
  2. Place dough onto a floured surface. Roll dough to ½ inch thickness using a rolling pin or a sturdy, straight sided drinking glass or jar.
  3. Cut into 1/4 to 1/2 inch strips, about 3-5 inches long. Let sit for 5-10 minutes.
  4. For soup: In a large pot, add water and chicken broth; bring to a boil.
  5. Add noodles a few at a time to water and chicken broth mixture. Bring the soup back to a boil.
  6. Add chicken, vegetables, and pepper. Boil for 12-15 minutes or until noodles are tender. Serve warm.
  7. Refrigerate or freeze within 2 hours.

Directions

  1. In 4 quart (or larger) saucepan, sauté the mushrooms and onion in margarine until tender. Stir in the flour and curry powder until blended. Gradually add the broth.
  2. Bring to a boil; cook and stir for 2 minutes or until thickened.
  3. Add the pumpkin, milk, honey, salt, pepper, and nutmeg; heat through.
  4. Garnish with chives if desired.
  5. Refrigerate leftovers within 2 hours.

1 clove garlic, minced, or 1/4 teaspoon garlic powder
2 cups spaghetti sauce
4 Tablespoons fresh parsley, or 4 teaspoons dried
1 teaspoon oregano
1 teaspoon basil
1 pint (2 cups) low-fat cottage cheese
2⁄3 cup shredded mozzarella cheese
6 uncooked lasagna noodles
1⁄3 cup grated parmesan cheese

Directions

  1. Cook ground beef over medium-high heat (350 degrees in an electric skillet) until it is no longer pink.
  2. Drain fat, add onion, and cook until onion is clear.
  3. Add garlic, 1 cup of the spaghetti sauce, and herbs; spread evenly in skillet.
  4. Reduce heat to low (200 degrees in an electric skillet), spread cottage cheese over mixture, and sprinkle with half of the mozzarella. Top with 4 noodles, breaking remaining 2 to fill in open spaces.
  5. Pour remaining spaghetti sauce evenly over the top of noodles; gently press noodles down to moisten.
  6. Cover and simmer 15 minutes until noodles are tender. Top with remaining cheeses, cover, and simmer 2 more minutes or until cheeses are melted.
  7. Let stand, covered, 5-10 minutes before serving.
  8. Refrigerate leftovers within 2 hours.

Ingredients

8 ounces pasta (try penne)
1 Tablespoon vegetable oil
3 cloves minced garlic or 3/4 teaspoon garlic powder
10 ounces frozen spinach
1 can (15 ounces) diced tomatoes with juice
1 can (15 ounces) white beans, drained and rinsed
1⁄2 teaspoon salt
1⁄2 teaspoon pepper
1⁄2 cup grated parmesan cheese

Directions

  1. Cook pasta according to package Directions. Set aside.
  2. Meanwhile, heat oil in large skillet. Add garlic and cook on low (250 degrees in an electric skillet) until soft.
  3. Add spinach, tomatoes with juice, drained beans, salt, and pepper. Once the mixture bubbles, cook uncovered on low heat for 5 minutes.
  4. Add drained pasta and parmesan to spinach mixture. Toss well and serve.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Substitute cleaned and chopped fresh spinach (about 6 cups).
  • Try other greens, such as Swiss chard or kale instead of spinach. Be sure to clean greens well and cook them until soft.
  • Cook your own dry beans. One can (15 ounces) is about 1 1/2 to 1 3/4 cups drained beans.
