Vegetarian Chili

Ingredients

2 teaspoons vegetable oil
2 cloves garlic, minced or 1/2 teaspoon garlic powder
1 medium onion, chopped
1 green bell pepper, chopped
2 cups fresh mushrooms, sliced
1 cup corn, frozen or canned and drained
1 can (15.5 ounce) pinto beans, drained and rinsed
1 can (8 ounce) tomato sauce
1 can (14.5 ounce) stewed tomatoes
1⁄2 cup bulgur, uncooked
1⁄2 cup water
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon chili powder
1 cup cheddar cheese, grated (low fat)

Directions

  1. Heat oil in large skillet over medium-high heat (350 degrees in an electric skillet).
  2. Add garlic, onion, pepper, and mushrooms and saute until tender, 6-8 minutes.
  3. Add remaining Ingredients except cheese.
  4. Reduce heat to low, cover and cook until bulgur is soft, 10-15 minutes.
  5. Sprinkle with grated cheese and serve.
  6. Refrigerate leftovers within 2 hours.

Notes

  • Use kidney or black beans instead of pinto beans.
  • One large ear of corn makes about 1 cup of cut corn.
  • Top with light sour cream.
  • Cook your own dry beans. One can (15 ounces) is about 1 1/2 to 1 3/4 cups drained beans.

Ingredients

1 teaspoon oil
1 pound lean ground turkey (15% fat)
2⁄3 cup chopped onion (2/3 medium onion)
1⁄2 cup green pepper, seeded and chopped (about 1 small pepper)
2 cloves garlic, minced or 1/2 teaspoon garlic powder
1 can kidney beans, drained and rinsed (15 ounce or 1 3/4 cups)
1 can great northern beans, drained and rinsed (15 ounce or 1 3/4 cups)
1 can solid-pack pumpkin (15 ounce or 1 3/4 cups)
1 can crushed tomatoes (15 ounce or 1 3/4 cups)
1 can chicken broth, low sodium (15 ounce or 1 3/4 cups) (see Notes)
1⁄2 cup water
2 Tablespoons brown sugar
1 package taco seasoning mix (1.25 ounces)

Directions

  1. Pour oil into a 4 quart (or larger) saucepan.
  2. Add ground turkey, onion, green pepper and garlic.
  3. Cook and stir, breaking meat apart until meat is brown and vegetables are tender.
  4. Stir in the beans, pumpkin, tomatoes, broth, water, brown sugar and taco seasoning.
  5. Bring to a boil. Reduce heat; cover and simmer for 1 hour.
  6. Refrigerate leftovers within 2 hours.

Notes

  • Broth can be canned or made using bouillon. For each cup of broth use 1 cup very hot water and 1 teaspoon or 1 cube bouillon.
  • Use leftover turkey cut in bite sized piece instead of ground turkey. Saute the vegetables then add the turkey with the other Ingredients

Ingredients

1 Tablespoon vegetable oil
1 cup onion, finely chopped (1 medium onion)

Directions

  1. Heat oil in a large soup pot. Add onion and garlic and sauté until soft.
  2. Add crushed tomatoes and bring to a boil. Boil for 5 minutes, and reduce heat to low.

Ingredients

1 can (15 ounces) diced tomatoes
1⁄4 cup onion, chopped (1⁄4 medium onion or 2 green onions, chopped including green tops)

1 lime, squeezed for juice
1 can (4 ounces) diced green chilies
1⁄4 cup fresh cilantro leaves, loosely packed

Directions

  1. Combine Ingredients, except cilantro, in a blender and blend to desired consistency.
  2. Finely chop cilantro and stir into other Ingredients.
  3. Serve immediately or refrigerate in airtight container for up to 1 week.

Notes

  • No blender? Make a chunky salsa by cutting all Ingredients to desired size before mixing.
  • Try adding drained canned corn or black beans with cilantro.
  • Make ahead to allow flavors to blend.
  • Freeze extra lime juice to use later.

Ingredients

1⁄2 pound ground beef

8 ounces wide noodles
1 package frozen chopped spinach, thawed (10 ounce)

1⁄2 cup shredded mozzarella cheese (4 ounces)

Directions

  1. Stir ground beef, onion, and garlic together in a large skillet over medium high heat (350 degrees in an electric skillet) until meat is browned.
  2. Add spaghetti sauce and water to skillet and bring to a boil.
  3. Add uncooked noodles, stir, cover with lid, reduce the heat and simmer 5 minutes.
  4. Squeeze the thawed spinach to remove the juice then stir into the noodle mixture. Cover and simmer for 5 minutes.
  5. Spoon cottage cheese over the top. Sprinkle with mozzarella, cover and heat another 5 to 10 minutes until heated through and noodles are tender.
  6. Refrigerate leftovers within 2 hours.

Notes

  • Add fresh or canned (drained) sliced mushrooms.
  • Use whole wheat pasta instead to increase fiber and make this a whole grain meal.

Directions

  1. In a medium skillet over medium heat, sauté onion and garlic in margarine until soft (about 5 minutes).
  2. Add turnips and sugar. Sauté, stirring occasionally, until lightly browned.
  3. Add broth and bring to a boil. Reduce heat and simmer until the liquid evaporates and the turnips are tender (about 30 to 40 minutes).
  4. Remove from heat. Stir in the lemon juice, parsley, salt and pepper. Serve hot.

Directions

  2. While pasta is cooking, toast sesame seeds in a 1 quart saucepan over medium heat. Stir constantly and cook until light brown.
  3. Mix together sugar, soy sauce, and vinegar in small bowl. Set aside.
  4. Heat oil in large skillet over medium heat (300 degrees in an electric skillet). Add garlic and broccoli, and cook on medium until soft.
  5. Add chicken and cook until heated through.
  6. Add drained pasta and soy sauce mixture and mix well. Sprinkle sesame seeds on top.

  • Substitute diced tofu or a can of drained garbanzo beans for chicken.

Directions

  1. Combine spices, cornstarch, and oil in a large bowl.
  2. Add cooked meat and vegetables. Mix well.
  3. Place 1 tablespoon of mixture in the center of each wonton wrapper.
  4. Brush wrapper edges with water or egg white.
  5. Fold wrapper diagonally so corners line up, and press edges together to seal.
  6. Bring the side two corners together over the pouch of filling and pinch to close.

  1. In a large bowl, mix flour, pepper, egg, garlic, soy sauce, and water in a bowl until smooth.
  2. Stir in the grated turnip, carrot and green onion.
  3. Heat half of oil in a large skillet over medium heat (350 degrees F in an electric skillet). Pour about 1/4 cup of batter for each pancake into skillet. Flatten with a fork into a 3-inch circle.
  4. Cook until edges look dry and bottom is golden, about 3-4 minutes. Turn once. Cook until bottom is golden and crispy. Repeat with the remaining batter adding remaining oil as needed. Pancakes will be moist in the center.
  5. Combine dipping sauce Ingredients in a small bowl. Serve with warm pancakes.

1 medium butternut squash, about 1 1/2 to 2 pounds

1 cup grated cheese (try Monterey jack)

Directions

  1. Peel squash, cut in half and remove seeds. Cut the squash into 1/2 inch cubes.
  2. In a large skillet, heat oil over medium heat (300 degrees in an electric skillet). Add onions and cook, stirring for about 3 minutes. Add the squash, salt and chili powder.
  3. Cover and cook, stirring occasionally, about 10-12 minutes. Stir in chilies and cook about 3 minutes.
  4. Sprinkle with cheese and cover until cheese melts, about 2 minutes.
  5. Serve hot. Refrigerate leftovers within 2 hours.

Notes

  • Prepare fresh chilies by roasting 1 pound fresh green poblano chilies (about 4 whole peppers) either by placing them over a stovetop gas flame or by roasting under an oven broiler. Turn them frequently until all sides are charred black, about 7-10 minutes. Allow peppers to cool, about 15 minutes. Remove the stems and seeds and chop.
  • Like more spicy flavor? Use more or hotter chilies.
  • Use as a filling for tacos, burritos or wraps!

  1. In a large saucepan over medium-high heat, sauté onions and celery in oil until onions are clear.
  2. Add the potatoes, broth, and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 to 25 minutes or until the potatoes are tender.
  3. In a small bowl, stir together cornstarch and ¼ cup of milk until smooth. Add remaining milk. Stir into the potato mixture.
  4. Cook and stir until thickened and heated through, about 5 minutes. Do not boil.
  5. Remove from heat. Stir in cheese until melted. Top with bacon bits. Serve warm.

2 cloves garlic, minced, or 1/2 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried parsley
1⁄4 teaspoon cayenne pepper

Directions

  1. Heat pan over medium-high heat (350 degrees in an electric skillet). Add oil and chicken, and cook until no longer pink when cut.
  2. Reduce heat to medium (300 degrees in electric skillet).
  3. Add tomatoes with juice, chili sauce, green pepper, celery, onion, garlic, basil, parsley, and cayenne pepper.
  4. Bring to a boil; reduce heat to low and simmer, covered, for 10-15 minutes.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Serve over hot, cooked rice or pasta.
  • No chili sauce? Make your own and reduce sodium using these Ingredients:
    • 1 can (8-ounce) tomato sauce
    • 1 tablespoon vinegar
    • 1 teaspoon brown sugar
    • 1 teaspoon chili powder

Chicken, Broccoli & Cheese Skillet Meal

Ingredients

2 whole skinless, boneless chicken breasts (1 1/2 pounds) cut in 1" cubes
2 teaspoons oil
1 1⁄2 cups or more chopped broccoli, fresh or frozen
1 can (14.5 ounces) low sodium chicken broth (see Notes)
1 can (10.5 ounces) low sodium condensed cream of chicken soup
1 teaspoon pepper
2 cloves garlic, minced or 1/2 teaspoon garlic powder
2 cups small shell pasta, uncooked
1 cup (4 ounces) cheddar cheese, shredded

Directions

  1. Heat oil in skillet over medium-high heat (350 degrees in an electric skillet). Add chicken and cook until no longer pink, about 2-3 minutes.
  2. Add broccoli, broth, soup, pepper, garlic and pasta. Bring to a boil.
  3. Reduce heat to lowest setting, cover, and simmer for 15-20 minutes, or until pasta is tender.
  4. Stir occasionally to prevent sticking.
  5. Check near the end of cooking and add a small amount of water, if needed.
  6. Add cheese during last two minutes.
  7. Refrigerate leftovers within 2 hours.

Notes

  • Broth can be canned or made using bouillon. For each cup of broth use 1 cup very hot water and 1 teaspoon or 1 cube bouillon.
  • Try whole wheat pasta when available
